Chicken Niçoise Salad

Serves 4 people

Ingredients

  • 4 large eggs
  • 1 lb green beans, trimmed
  • 2 Tbsp water
  • 4 Tbsp extra virgin olive oil
  • 1/2 tsp lemon rind
  • 2 Tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 2 cloves garlic, minced
  • 1/4 tsp pepper
  • 2 cups shredded rotisserie chicken (without
  • skin)
  • 1 (10-oz) pkg chopped romaine lettuce
  • 4 Roma tomatoes, cut into wedges
  • 1/2 cup pitted kalamata olives

Directions

  1.   Place eggs in a single layer in a stainless

  2. steel saucepan; add water to cover. Bring to a

  3. rolling boil; remove from heat, and let stand,

  4. covered, 15 minutes. Drain; run cold water over

  5. eggs. Peel eggs; cut into quarters. Meanwhile,

  6. place beans and water in a microwave-safe

  7. baking dish. Cover and microwave at HIGH 3

  8. minutes or until tender. Cool slightly. Whisk

  9. together oil, lemon rind and juice, mustard,

  10. garlic and pepper. Toss chicken with 2 Tbsp

  11. dressing. Place lettuce on 4 plates. Top with

  12. eggs, beans, chicken, tomatoes and olives and drizzle with remaining dressing.
