Grilled and Glazed Radicchio Wedges

Ingredients

  • 1 1/2 cups apple juice
  • 1/3 cup balsamic vinegar
  • 2 tbsp. apple jelly
  • 2 small heads radicchio, quartered through the core
  • 1/4 cup olive oil
  • 1 cup crumbled blue cheese

Directions

  1. In a small pan, boil apple juice, vinegar and jelly until reduced to 1/2 cup, about 15 minutes; season glaze. Brush cut sides of radicchio with oil; season. Grill over medium heat, 2 minutes per cut side. Drizzle with glaze. Top with cheese.
