Ingredients
- 1 cup fresh ricotta
- 1/2 cup whole milk
- 2 large eggs
- 1/3 cup confectioners' sugar
- 1 tbsp. orange zest, plus more for garnish
- 1 cup flour
- 2 tsp baking powder
- canola oil, for frying
- 1/4 cup pure maple syrup
- 1/4 tsp ground cinnamon

In a bowl, whisk ricotta, milk, eggs, sugar, 1 tbsp. orange zest, and 1/4 tsp salt. Whisk in flour and baking powder. In pot, heat 2 inches of oil over medium until shimmering. Working in batches, drop 2 tbsp. batter for each fritter into hot oil. Fry, turning once, until deep golden, about 8 minutes. Drain fritters on paper towels. In saucepan, warm maple syrup with cinnamon over medium. Drizzle over fritters. Garnish with orange zest.
