Greek Chicken with cucumber yogurt sauce

Ingredients

  • 4 chicken breasts
  • 2 T. olive oil
  • 2 T. lemon juice
  • 1 T. Dijon-style mustard
  • 2 cloves garlic minced
  • 1 tsp. dried oregano, crushed
  • 1/2 c. plain low-fat yogurt
  • 3/4 c. peeled, seeded & coarsley chopped cucumbers
  • 1/4 tsp dried dill-weed
  • 3 c. shredded lettuce
  • pita bread

Directions

  1. Cut chicken into small pieces and place chicken in plastic bag. Pour in marinade (combine oil, lemon juice, mustard, 2 cloves garlic, oregano, 1/8 tsp. pepper).

  2. Refrigerate for 3 – 24 hours

  3. Sauce: Combine yogurt, cucumber, 1 clove garlic, dill weed in a small bowl and chill.

  4. Serve with shredded lettuce and pita bread.
