Oven-Roasted Asparagus

Ingredients

  • 2 lbs. thin asparagus spears, bottoms trimmed
  • 1/3 cup corn oil
  • 1/4 cup grated Parmesan
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp. lemon juice

Directions

  1. Preheat oven to 425. Line a 10×15-inch rimmed baking sheet with foil.

  2. Spread asparagus on foil. Drizzle with oil; toss to coat. Sprinkle with cheese, garlic, salt and pepper. Toss again, then arrange asparagus in a single layer.

  3. Roast until just tender, 12-15 minutes. Sprinkle with lemon juice just before serving.
