Roasted Parmesan Rosemary Potatoes

Ingredients

  • 1 1/2 lbs. baby yellow and/or red potatoes, cut into 1-inch pieces
  • 3 tbsp. olive oil
  • 2 tbsp. grated Parmesan
  • 1 tbsp. chopped fresh rosemary
  • 1/4 tsp coarse salt
  • 1/4 tsp black pepper

Directions

  1. Preheat oven to 425.

  2. Mix together all ingredients in a large bowl, then spread on a 10×15-inch foil-lined baking pan.

  3. Bake until potatoes are golden brown and tender, 25-30 minutes. Remove from oven and let cool 3-5 minutes.
