Ingredients
- 1 1/2 lbs. baby yellow and/or red potatoes, cut into 1-inch pieces
- 3 tbsp. olive oil
- 2 tbsp. grated Parmesan
- 1 tbsp. chopped fresh rosemary
- 1/4 tsp coarse salt
- 1/4 tsp black pepper
Directions

Preheat oven to 425.

Mix together all ingredients in a large bowl, then spread on a 10×15-inch foil-lined baking pan.

Bake until potatoes are golden brown and tender, 25-30 minutes. Remove from oven and let cool 3-5 minutes.
