Ingredients
- 12-16 oz. packaged sweet potato vermicelli
- 1/2 cup boiling water
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 3 tbsp. vegetable oil
- 1 tsp toasted sesame seeds

Break vermicelli bundle in half and divide among 2 extra-large bowls. Add hot tap water to cover. Let stand 10 minutes to soften; drain. Snip noodles into 5-inch lengths with kitchen shears; transfer to 1 bowl.

Whisk together boiling water, soy sauce, and brown sugar in a small bowl; pour over noodles. Let stand 2 minutes.

Heat oil in a large skillet over medium heat. Add noodle mixture; cook, stirring, until noodles become translucent and just begin to brown, about 5 minutes. Serve hot. Sprinkle with sesame seeds just before serving.
