Ingredients
- 1/2 tsp lemon zest
- 1 tbsp. lemon juice
- 1 tsp honey
- 3/8 tsp kosher salt
- 1/4 tsp black pepper
- 2 tbsp. olive oil
- 5 oz. baby arugula
- 1/4 cup shaved fennel
- 1/4 cup Pecorino Romano
- 3 tbsp. toasted pine nuts
Directions

Combine lemon zest, lemon juice, honey, salt and pepper in a small bowl. Slowly drizzle in olive oil, whisking constantly, until emulsified. Combine arugula and fennel in a large bowl. Toss with dressing and top with Romano and pine nuts.
