Arugula Salad with Lemon and Pine Nuts

Ingredients

  • 1/2 tsp lemon zest
  • 1 tbsp. lemon juice
  • 1 tsp honey
  • 3/8 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp. olive oil
  • 5 oz. baby arugula
  • 1/4 cup shaved fennel
  • 1/4 cup Pecorino Romano
  • 3 tbsp. toasted pine nuts

Directions

  1. Combine lemon zest, lemon juice, honey, salt and pepper in a small bowl. Slowly drizzle in olive oil, whisking constantly, until emulsified. Combine arugula and fennel in a large bowl. Toss with dressing and top with Romano and pine nuts.
