Kimchi-Bacon Jam

Ingredients

  • 3 center-cut bacon slices
  • 2/3 cup chopped onion
  • 1 garlic clove, minced
  • 2 tsp brown sugar
  • 1/4 tsp paprika
  • 3/4 cup amber beer
  • 2 tbsp. kimchi

Directions

  1. Cook bacon in a skillet over medium-high until crisp. Remove bacon; reserve drippings in pan. Reduce heat to medium; add onion; cook 4 minutes. Add garlic, sugar, and paprika; cook 1 minute. Add beer; bring to a boil over medium-high. Cook until beer is reduce to 1/4 cup. Remove from heat; stir in bacon and kimchi. Pulse mixture in a food processor until finely chopped.
