Pickled Mushrooms

Ingredients

  • 3 lbs. medium fresh mushrooms
  • 8 cups water
  • 2 cups sugar
  • 2 cups white vinegar
  • 2 cups dry red wine
  • 3 tbsp bitters
  • 1 tsp onion powder
  • 1 tsp garlic salt
  • 1 tsp beef bouillon granules
  • 1 bay leaf

Directions

  1. In a large saucepan, combine mushrooms and water. Bring to a boil; boil for 1 minute. Drain; return the mushrooms to pan.

  2. In a small saucepan, combine the remaining ingredients; bring to a boil, stirring constantly. Pour over the mushrooms; cool slightly.

  3. Transfer mushroom mixture to glass jars with tight-fitting lids. Cover and refrigerate for at least 2 days. Just before serving, discard bay leaf.
