Scones

Ingredients

  • 2 c. flour
  • 2 1/2 tsp. baking powder
  • 2 tbsp. sugar
  • 1 tsp. salt
  • 1/4 c. shortening
  • 1/2 c. milk
  • 1 egg, slightly beaten
  • 1/2 c. (+/-) frozen blueberries or cruisers

Directions

  1. Preheat oven to 450

  2. Combine flour, baking powder, sugar, salt in large mixing bowl. Stir w/ fork or small whisk to mix and aerate.

  3. Add shortening and cut in w/ pastry cutter or fork til crumbly.

  4. Stir in fruit.

  5. Stir in milk & egg only until dry ingredients. are moistened.

  6. Turn out dough onto lightly floured surface and knead gently about 12 times.

  7. Pat into circle about 1/2" thick (optional: you may add glaze here by brushing milk over dough and sprinkle w/ sugar).

  8. Cut dough into pie-shaped pieces.

  9. Place 1" apart on cookie sheet

  10. Bake 10-12 min. or til golden brown.

  11. Serve hot.
