Flank Steak with Couscous

Ingredients

  • 1 garlic clove, minced
  • 1 tsp olive oil
  • 1/2 tsp Italian seasoning
  • 1/4 tsp pepper
  • 1/8 tsp salt
  • 1 lb. beef flank steak
  • 2 pkg (5.8 oz. each) roasted garlic and olive oil couscous
  • 3/4 cup diced roasted sweet red pepper, drained
  • 1/2 cup Italian salad dressing

Directions

  1. Preheat broiler. Mix the first five ingredients; rub over steak. Place on a broiler pan.

  2. Broil 2-3 inches from heat until meat reaches desired doneness, 6-8 minutes per side. Let stand 5 minutes.

  3. Meanwhile, cook the couscous as directed. Stir in red pepper. Slice steak thinly across the grain; drizzle with dressing. Serve with couscous.
