Ingredients
- 2 cups flour, plus more for rolling
- 1 tbsp poppy seeds
- 1 tsp sugar
- 3 tbsp olive oil, plus more for brushing
- 2 tbsp fresh thyme leaves
- Flaky sea salt

In a food processor, blend flour, poppy seeds, sugar, and 3/4 tsp salt. Add 3 tbsp oil and 1/2 cup plus 1 tbsp water; pulse until dough forms. Divide in half. On floured surface, roll dough into 2 large, thin ovals. Transfer to parchment-lined baking sheets. Brush with olive oil. Sprinkle with thyme, sea salt, and pepper. Bake at 425 until browned at edges, about 12 minutes. Let cook; break into pieces.
