Ingredients
- 1/4 cup olive oil
- 2 tbsp finely chopped red onion
- 1 tsp orange zest plus 3 tbsp juice
- 1 large heart of romaine, chopped
- 1/2 English cucumber, chopped
- 1 pint cherry tomatoes, halved
- 2 oz. feta, crumbled
- 1/2 cup chopped almonds
- 1/3 cup chopped dried apricots
- 1/4 cup chopped fresh mint
Directions

In a small bowl, whisk the olive oil, onion, and orange zest and juice; season the vinaigrette with salt and pepper. Place the lettuce in a large bowl. Arrange the remaining ingredients on top in organized piles. Season the salad and drizzle with the vinaigrette.
