Ingredients
- 2 eggs
- 1/4 t. to 1/2 t. salt
- freshly ground pepper
- 1 -2 T. sweet butter
- A prepared filling
Directions

Beat eggs lightly. Add salt and pepper. Heat butter in pan over high heat. As the butter and just as it is begining to turn brown, pour in the eggs. Shake pan back and forth on the burner stirring the egg with a fork held horizontally. Keep lifting up edges with fork or spatula to let the soft part run down underneath. Spread prepared filling over half the omelet. Fold in two and slide onto a plate.
