Brie Burgers with Fries

Ingredients

  • 12 oz. frozen french fries
  • 1 tbsp plus 1 tsp Dijon
  • 2 tsp white wine vinegar
  • 1 small shallot, minced
  • 1 tbsp plus 2 tsp vegetable oil
  • 1 1/2 lbs. ground beef
  • 1 tbsp Worcestershire
  • Kosher salt and black pepper
  • 6 oz. brie cheese, cut into 8 thin slices
  • 4 brioche buns, split
  • 1 small bunch watercress, tough stems trimmed
  • Cornichons and ketchup, for serving

Directions

  1. Bake the fries as directed. Meanwhile, whisk 1 tsp mustard, the vinegar, half the minced shallot and 2 tsp vegetable oil in a large bowl; set aside.

  2. Combine the beef, remaining minced shallot, remaining 1 tbsp Dijon, Worcestershire, 1/2 tsp salt and black pepper in a medium bowl. Form into four 4-inch patties. Heat the remaining 1 tbsp vegetable oil in a large skillet over medium-high heat. Add the patties and cook until browned, 3-4 minutes per side for medium rare; top each with 2 slices brie during the last 2 minutes of cooking and cover to melt.

  3. Toast the buns. Add the watercress to the bowl with the dressing, season lightly with salt and pepper and toss to coat. Put the burgers on the buns and top with the watercress salad. Serve with the fries, cornichons and ketchup.
