Ingredients
- 1 tbsp olive oil
- 12 oz. fresh chorizo
- 1 poblano, sliced
- 1 red bell pepper, sliced
- 2 scallions, sliced
- Salt and pepper
- 1/4 cup salsa
- 1/4 cup water
- 6 tostadas
- Fried eggs and more sliced scallions, for serving
Directions

Heat 1 tbsp oil in a large skillet over medium-high heat. Add chorizo; cook, stirring, until browned, about 5 minutes. Push to one side of the skillet.

Add another tbsp olive oil, poblano, red bell pepper and scallions to the skillet; season with salt and pepper. Cook until tender, 5 minutes. Add 1/4 cup each salsa and water; stir everything together.

Divide the chorizo mixture among tostadas; top each with a fried egg and more sliced scallions.
