Ingredients
- 4 oz. diced slab bacon
- 1 cup cubed pineapple
- 1 tbsp chopped garlic
- 1 tbsp chopped ginger
- 1 bunch scallions, chopped
- 2 eggs, scrambled
- 3 cups cooked rice
- 3 tbsp soy sauce
- 1 tbsp rice wine
- 1 tbsp sesame oil
Directions

Stir-fry bacon over medium heat, 2 minutes. Increase heat to high. Add pineapple, garlic, ginger and scallions; stir-fry 1 minute. Stir in eggs, rice, soy sauce, rice wine and sesame oil.
