Ingredients
- 4 plum tomatoes, diced
- 2 tbsp chopped cilantro
- 1/2 red onion, minced
- 1 garlic clove, minced
- 1 jalapeno, minced
- Juice of 1 lime
- 1/2 tsp kosher salt
- Black pepper

In a medium bowl, combine all ingredients; mix well. Cover and refrigerate to allow the flavors to meld, 1 hour or up to 3 days. Drain any excess liquid before serving.
