Ingredients
- 3/4 cup sour cream
- 1/2 cup mayo
- 2 tbsp chopped cilantro
- 2 tbsp heavy cream
- 2 tbsp prepared wasabi paste
- 1 garlic clove, grated
- Kosher salt and black pepper
- Thick beef filet steaks, set out at room temp for 20 minutes
- Olive oil,for drizzling

Up to a day ahead of time, make the wasabi cream sauce: In a medium bowl, combine the sour cream, mayo, cilantro, and heavy cream.

Add the wasabi paste, garlic, and salt and pepper to taste. Stir until it’s nice and smooth. (Cover and refrigerate if you make it ahead of time).

For the steaks: Preheat the oven to 425. Heat a cast-iron skillet over high heat until hot. Drizzle the steaks with olive oil and season them with salt and pepper.

Add the steaks to the skillet and sear them quickly, about 1 minute per side. Transfer the skillet to the oven and roast for 5 minutes.

Serve the steaks with a simple green salad and the wasabi cream on the side.
