Parmesan Roasted Tomatoes and Squash

Ingredients

  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp kosher salt
  • 3/4 tsp dried Italian seasoning
  • 1/2 tsp black pepper
  • 1 lb. Campari tomatoes, halved
  • 1/2 lb. zucchini, cut into 1/2-inch thick slices
  • 1/2 lb. yellow squash, cut into 1/2-inch thick slices
  • 1/2 cup finely shredded Parmesan

Directions

  1. Preheat oven to 400. Line a large rimmed baking sheet with parchment paper.

  2. In a large bowl, whisk together oil, garlic, salt, Italian seasoning, and pepper. Stir in tomatoes, zucchini, and squash. Spread in an even layer on prepared pan. Sprinkle with Parmesan.

  3. Bake until veggies are tender and cheese is golden brown, 25-30 minutes. Serve immediately.
