Garlic Citrus Pork and Pepper Kabobs

Ingredients

  • 1/2 cup chopped fresh cilantro
  • 1/2 cup olive oil
  • 4 limes, zested and juiced
  • 2 large navel oranges, zested and juiced
  • 3 tbsp. chopped fresh mint
  • 6 garlic cloves, smashed
  • 1 1/2 tsp ground cumin
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 2 (1 lb.) pork tenderloins, cut into 1-inch pieces
  • 2 large red bell peppers, seeded and cut into 1-inch pieces
  • 1 large sweet onion, cut into 1-inch pieces
  • Garnish: chopped fresh cilantro

Directions

  1. In a large bowl, stir together cilantro, oil, lime zest and juice, orange zest and juice, mint, garlic, cumin, salt and pepper. Stir in pork until well coated. Cover and refrigerate for at least 1 hour or overnight.

  2. Preheat grill to medium-high heat.

  3. Remove pork from bowl, discarding marinade. Thread pork, bell pepper and onion onto skewers as desired. Grill, turning occasionally, until cooked through, about 20 minutes. Let stand for 5 minutes before serving. Garnish with more cilantro.
