Ingredients
- 1 tbsp. oil
- 1 medium onion, diced
- 1 medium leek, white and light green parts thinly sliced
- 1 garlic clove, minced
- 4 oz. can mild green chiles, drained
- 3 medium sweet potatoes, peeled and diced
- 4 cups chicken broth
- 1/2 cup peanut butter
- Salt and pepper, to taste
- 1/2 cup chopped cilantro leaves

In a Dutch oven, heat the oil over medium. Add the onions and leeks and cook until soft, about 5 minutes. Add the garlic and chiles and cook for another minute. Add the sweet potatoes, chicken broth and peanut butter, raise heat, and bring to a boil. Reduce the heat, cover the pan and let simmer until the sweet potatoes are tender, about 20 minutes.

Use an immersion blender and blend until smooth. Season to taste with salt and pepper.

Garnish with cilantro leaves.
