Ingredients
- 1 1/2 lb. skirt steak
- 2/3 cup soy sauce
- 6 tbsp. Mirin
- 6 tbsp. brown sugar
- 2 tbsp. sesame oil
- 4 garlic cloves, minced
- 4 green onions, finely chopped
- 2 tsp grated fresh ginger
- 12 corn tortillas
- 12 lettuce leaves (Bibb)
Directions

Place the steak in a large Ziploc bag. Combine the soy sauce, Mirin, brown sugar, sesame oil, garlic, green onions and ginger in a mixing bowl. Whisk to combine. Pour the marinade over the meat and let sit at room temp for 30 minutes.

Heat a grill to medium-high.

Pat the steak dry with paper towels and grill 2 minutes per side. Let rest for 10 minutes then slice thinly.

Grill the tortillas 30-60 seconds per side. Keep warm.

To serve, place a lettuce leaf on top of a tortilla and top with some sliced meat.
