Ingredients
- 2 heaping tablespoons flour
- 4 tablespoons oil
- 1 cup chopped onions (1 medium)
- 1/2 cup chopped bell pepper (1 medium)
- 1/2 cup celery (couple stalks)
- 3 or 4 bay leaves
- black pepper to taste
- 1 1/2 tsp salt
- 1 8oz can tomato sauce
- 1 lb smoked sausage
- 1 1/2 cups uncooked rice (w/ 2 cups water)
- 1/4 tsp red pepper
- 1 tablespoon garlic powder (3 or 4 cloves fresh)
Directions

Make sure all ingredients are ready before cooking (onions cut, etc).

Make a rue: take flour and oil and keep stirring until milk chocolate colored, then throw in onions and stir in fast for a couple minutes until they start to get clear, then throw in bell pepper, celery, and sliced sausage.

When sausage looks cooked, put in tomato sauce and stir for a couple minutes until tomato sauce is scorched and thickens.

Add water, 1 tsp black pepper, red pepper, and garlic powder.

Bring to a rapid boil, then throw rice in, bring to boil again. Once boiling, turn fire down to low and put cover on. Cook 20 mins, don’t remove cover.

Raise cover and stir, put cover back on, cook another 10 mins, turn fire off, and let sit for 5 mins.
