Ingredients
- 6 ears fresh corn, husks removed
- 1 1/2 cups chopped tomatoes
- 1 cup diced green bell pepper
- 1/4 cup diced red onion
- 1 tbsp canola oil
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper
- Lime wedges
Directions

Preheat an outdoor grill to medium heat; lightly oil grate. Grill corn, turning occasionally, until tender and lightly charred, about 10 minutes. Set aside until cool enough to handle.

Hold corn cobs vertically on a cutting board. Using a sharp knife, carefully slice off kernels and transfer to a large bowl.

Add tomatoes, bell pepper, cilantro, onion, oil, salt and black pepper; toss together. Chill, covered, at least 2 hours before serving. Serve with lime wedges.
