Ingredients
- 4 slices bacon
- 2 lbs. red new potatoes, unpeeled
- 1/4 cup olive oil
- 3 tbsp white vinegar
- 1 tsp black pepper
- 1/2 tsp salt
- 1 cup chopped green onion
- 1/2 cup crumbled blue cheese

Cook bacon in a large skillet over medium heat until crisp. Drain; pat dry with paper towels. Crumble and set aside.

Bring a large pot of salted water to a boil. Add potatoes; cook until tender but still firm, about 15 minutes. Drain, cool, and quarter potatoes.

Whisk together oil, vinegar, pepper and salt in a large bowl. Add potatoes, bacon, green onion and cheese; toss to coat.
