Mix and Match Chicken Salad

Ingredients
- Mix-ins (1 cup total, choose up to 3):
- celery, diced
- carrots, diced
- radishes, diced
- cherry or grape tomatoes, halved
- seedless grapes, halved
- apple, diced
- cucumber, diced
- roasted peppers, diced
- avocado, diced
- corn kernels
- bacon, cooked and crumbled
- scallions, thinly sliced
- raisins or dried cranberries
- red, white or sweet onion, diced
- Dressing:
- 2 tsp lemon juice, white wine vinegar or apple cider vinegar
- 1 tsp Dijon
- 1/2 tsp kosher salt
- Black pepper
- 2/3 cup of mayo, yogurt or mayo and sour cream
- Salad:
- 4 cups grilled or rotisserie chicken (chopped or shredded)
- Fresh Herbs/Seasonings (2 tbsp total)
- Cilantro, chopped
- Parsley, chopped
- Dill, chopped
- Tarragon, chopped
- Basil, chopped
- Chives, chopped
- Fresh or pickled jalapeno, chopped
- Horseradish (1 tbsp)

Prepare your mix-ins.

Prepare the dressing; Whisk lemon juice or vinegar, Dijon, salt and pepper in a large bowl. Stir in 2/3 cup of mayo or yogurt.

Make the salad: Add chicken to the dressing along with the prepared mix-ins. Season with salt and pepper and toss to coat. Stir in the fresh herbs/seasonings.
