Grilled Asparagus and Red Bell Pepper

Ingredients

  • 2 bunches asparagus
  • 1 red bell pepper, quartered
  • Olive oil
  • Salt and pepper
  • 2 tbsp olive oil
  • 1 tsp red wine vinegar
  • Chopped chives

Directions

  1. Toss asparagus and red bell pepper with olive oil, salt and pepper. Grill over medium-high heat, turning, until tender and charred, 3 minutes for the asparagus and 6 minutes for the pepper. Thinly slice the pepper and toss with olive oil and vinegar; spoon over the asparagus. Top with chives.
