Ingredients
- 3 tbsp fresh lime juice
- 1/2 tsp red pepper flakes
- 1/2 tsp chili powder
- 6 tbsp rice wine vinegar
- 1 tsp sugar
- 6 tbsp olive oil
- Kosher salt and black pepper
- 1/2 medium jicama, peeled and julienned
- 4 medium carrots, peeled and julienned
- 1/2 small napa cabbage, shredded
- 1 small red onion, thinly sliced
- 1 English cucumber, julienned
- 1 red bell pepper, julienned
- 2 tbsp chopped fresh cilantro
Directions

In a small bowl, combine the lime juice, red pepper flakes, chili powder, vinegar, sugar and olive oil. Season with 1 tsp each salt and pepper and whisk to combine.

Combine the jicama, carrots, cabbage, red onion, cucumber, bell pepper and cilantro in a large bowl and toss.

Add the dressing to the veggies. Let sit 15 minutes, stirring 2 or 3 times.
