beef stew

Ingredients
- 600g diced topside
- 2 medium onions
- 2 celery stalks
- 1 capsicum
- 3-4 medium potatoes
- 2 carrots
- flour
- 1 tin tomatoes
- 750ml - 1litre beef stock (or veg) better to use TetraPak than cubes
- garlic
- parsley
- thyme
- 1/2 to 2/3 glass wine
- anchovies?
- rosemary - one sprig is good

Season meat w salt and coat w flour (or not – makes frying difficult)

Fry medium-high beef and onions till brown

Xfer to stockpot, add 1 can tomatoes, beef stock, some garlic, parsley, thyme, wine

mmer 1.5 hrs

Add veg, simmer 1 hr
