Ingredients
- 1/2 cup butter, softened
- 1 cup sugar
- 1 egg
- 1 cup evaporated milk
- 1 tsp vanilla extract
- 2 cups flour
- 1/2 cup unsweetened cocoa powder
- 1 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 18 marshmallows
- 1 cup crushed graham crackers

Preheat oven to 400. Lightly grease a cookie sheet or line with parchment paper.

Beat together butter and sugar in a large bowl with an electric mixture until fluffy. Mix in egg, evaporated milk, and vanilla. In a separate bowl, whisk together flour, cocoa powder, baking soda, baking powder and salt. Stir flour mixture slowly into butter mixture just until combined.

Drop dough by rounded tbspfuls onto prepared sheet, spacing at least 3 inches apart. Bake until firm when pressed with a finger, 6-8 minutes. Transfer to a wire rack and cool completely.

Thread marshmallows on long skewers, 2 at a time. Hold over an open fire or charcoal grill at high heat, turning, until soft and lightly browned on all sides, about 5 minutes. Sandwich 1 marshmallow between 2 cookies, then press gently together. Roll marshmallow edges immediately in graham crackers.
