Crunchy Cornbread Salad

Ingredients

  • 6 cups cubed cornbread
  • 2 tbsp unsalted butter, melted
  • 1/2 tsp kosher salt, divided
  • 1/2 tsp black pepper, divided
  • 3 tbsp mayo
  • 2 tbsp apple cider vinegar
  • 2 tsp Dijon
  • 1/2 tsp sugar
  • 1 large orange bell pepper, seeded and diced
  • 1 large red bell pepper, seeded and diced
  • 1 cup diced cucumber
  • 1/4 cup chopped green onion

Directions

  1. Preheat oven to 350. Spray a large rimmed baking sheet with cooking spray.

  2. In a large bowl, stir together cornbread, melted butter, and 1/4 tsp salt and pepper. Spread in an even layer on prepared pan.

  3. Bake until golden brown, about 20 minutes. Let cool completely.

  4. In a large bowl, whisk together mayo, vinegar, mustard, sugar and remaining 1/4 tsp salt and pepper. Stir in toasted cornbread, bell peppers, cucumber, and green onion until combined. Serve immediately.
