Ingredients
- 6 cups cubed cornbread
- 2 tbsp unsalted butter, melted
- 1/2 tsp kosher salt, divided
- 1/2 tsp black pepper, divided
- 3 tbsp mayo
- 2 tbsp apple cider vinegar
- 2 tsp Dijon
- 1/2 tsp sugar
- 1 large orange bell pepper, seeded and diced
- 1 large red bell pepper, seeded and diced
- 1 cup diced cucumber
- 1/4 cup chopped green onion

Preheat oven to 350. Spray a large rimmed baking sheet with cooking spray.

In a large bowl, stir together cornbread, melted butter, and 1/4 tsp salt and pepper. Spread in an even layer on prepared pan.

Bake until golden brown, about 20 minutes. Let cool completely.

In a large bowl, whisk together mayo, vinegar, mustard, sugar and remaining 1/4 tsp salt and pepper. Stir in toasted cornbread, bell peppers, cucumber, and green onion until combined. Serve immediately.
