Cilantro Lime Rice

Ingredients

  • 2 cups basmati rice, rinsed until water is clear
  • 4 cups water
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • 1 bay leaf
  • 1/2 cup chopped fresh cilantro
  • 2 tsp lime zest
  • 2 tbsp fresh lime juice

Directions

  1. In a 3-quart saucepan, bring rice, 4 cups water, oil, salt, and bay leaf to a boil over high heat. Reduce heat to medium-low, cover, and cook for 15-18 minutes. Remove from heat, and fluff rice with a fork. Cover and let stand for 5 minutes. Stir in cilantro and lime zest and juice.
