Ingredients
- 2 cups basmati rice, rinsed until water is clear
- 4 cups water
- 2 tbsp olive oil
- 2 tsp kosher salt
- 1 bay leaf
- 1/2 cup chopped fresh cilantro
- 2 tsp lime zest
- 2 tbsp fresh lime juice
Directions

In a 3-quart saucepan, bring rice, 4 cups water, oil, salt, and bay leaf to a boil over high heat. Reduce heat to medium-low, cover, and cook for 15-18 minutes. Remove from heat, and fluff rice with a fork. Cover and let stand for 5 minutes. Stir in cilantro and lime zest and juice.
