Mexican Corn Salad

Ingredients

  • 1/2 cup chopped fresh cilantro
  • 1/4 cup fresh lime juice
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 3 tbsp olive oil
  • 4 cups fresh corn kernels
  • 1/2 cup chopped scallions
  • 1 pint multicolored cherry tomatoes, halved
  • 1 cup thinly sliced radishes
  • 1 1/2 oz. crumbled Cotija

Directions

  1. Whisk together cilantro, lime juice, salt and pepper; gradually whisk in olive oil. Stir together corn, scallions, tomatoes, and radishes. Gently stir dressing into corn mixture. Sprinkle top with Cotija.
