Ingredients
- 1/2 cup chopped fresh cilantro
- 1/4 cup fresh lime juice
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 3 tbsp olive oil
- 4 cups fresh corn kernels
- 1/2 cup chopped scallions
- 1 pint multicolored cherry tomatoes, halved
- 1 cup thinly sliced radishes
- 1 1/2 oz. crumbled Cotija
Directions

Whisk together cilantro, lime juice, salt and pepper; gradually whisk in olive oil. Stir together corn, scallions, tomatoes, and radishes. Gently stir dressing into corn mixture. Sprinkle top with Cotija.
