Spicy Tomato Aioli

Put on a burger or use as a dip for fries

Ingredients

  • 1 tbsp olive oil
  • 1/4 cup chopped onion
  • 2 garlic cloves, minced
  • 1 tsp crushed red pepper
  • 14.5 oz. can diced fire-roasted tomatoes, drained
  • 2 tsp red wine vinegar
  • 1 cup canola mayo
  • 3/4 tsp kosher salt

Directions

  1. Heat olive oil in a medium saucepan over medium-high. Add onion; cook until tender, about 3 minutes. Stir in garlic and crushed red pepper; cook 30 seconds. Add tomatoes and vinegar. Cook 10 minutes; let cool completely. Process tomato mixture, mayo and kosher salt in a food processor until smooth.
