Spicy Corn Kabobs

Ingredients

  • 6 medium ears husked sweet corn, halved
  • 1/4 cup sour cream
  • 1/4 cup mayo
  • 1/2 cup grated cotija cheese or Parmesan
  • 2 tsp chili powder
  • 1/4 tsp cayenne pepper
  • 6 lime wedges

Directions

  1. Insert a metal or soaked wooden skewers into the cut end of each piece of corn. Grill, covered, over medium heat for 25-30 minutes or until tender, turning often.

  2. In a small bowl, combine the sour cream and mayo; spread over corn. Sprinkle with the cheese, chili powder and cayenne. Serve with lime wedges.
