Key Lime Ice Pops

Ingredients

  • 3/4 cup water
  • 2/3 cup granulated sugar
  • 4 large lime peel strips
  • 1 1/2 cups chopped ripe avocado
  • 1/2 cup plain Greek yogurt
  • 1/2 cup bottled Key lime juice
  • 2 tsp lime zest
  • 1 tsp vanilla extract
  • 1/4 cup coarse graham cracker crumbs

Directions

  1. Bring 3/4 cup water, sugar, and lime peel strips to a boil in a small saucepan over medium. Reduce heat to medium-low, and cook, stirring constantly, until sugar dissolves, about 5 minutes. Remove from heat and cool completely, about 30 minutes. Remove and discard lime peel strips.

  2. Process lime simple syrup, avocado, yogurt, Key lime juice, lime zest, and vanilla in a blender until smooth. Pour mixture evenly into 1 ice-pop molds. Sprinkle evenly with graham cracker crumbs, pushing some crumbs down slightly into the lime mixture. Freeze 30 minutes.

  3. Insert a craft stick into each pop. Freeze 3 hours before serving.
