Watermelon Carpaccio with Ricotta Salata

Ingredients

  • Baby seedless watermelon
  • 2 tbsp white wine vinegar
  • 2 tbsp olive oil
  • 1/2 tsp honey
  • 1/2 minced red jalapeno
  • Flaky sea salt
  • Shaved ricotta salata
  • Fresh mint

Directions

  1. Trim off end of the watermelon, then slice as thin as possible. Arrange on a platter, overlapping slightly. Whisk vinegar, olive, honey and jalapeno; drizzle on the watermelon and sprinkle with sea salt. Let sit 20 minutes. Top with ricotta and fresh mint.
