Ingredients
- 4 (1-inch thick) watermelon wedges
- Vegetable oil, for brushing
- 2 tbsp lime juice
- 2 tsp brown sugar
- 2 tsp soy sauce
- Bibb lettuce leaves
- Sliced cucumbers, scallions, cilantro and chopped peanuts, for serving
Directions

Lightly brush watermelon with vegetable oil on both sides. Grill over medium-high heat until well marked, 2-3 minutes per side. Let cool slightly, then cut into small chunks, discarding the rind. Whisk lime juice with brown sugar and soy sauce; toss with the watermelon and let stand 20 minutes. Serve in Bibb lettuce leaves with cucumbers, scallions, cilantro and peanuts.
