Ingredients
- 1/2 cup salted butter
- 3 lb. russet potatoes, peeled and cut into 1/8-inch thick slices
- 2 tsp kosher salt
- 1/2 tsp black pepper
- Fresh flat-leaf parsley or thyme leaves
- Caramelized Onion Gravy (see recipe)

Preheat oven to 450. Melt 2 tbsp of the butter in a 10-inch cast-iron skillet over medium. Starting in the center, arrange a single layer of potato slices, overlapping, in a circular pattern in skillet; sprinkle with about 3/8 tsp salt and 1/8 tsp pepper. Brush with out 1 tbsp butter. Repeat layers 4 more times, starting with potatoes and ending with butter. Press firmly to pack.

Cover with foil, and bake in preheated oven 20 minutes. Uncover and bake until potatoes are browned on bottom, 30-35 minutes.

Loosen edges of potatoes with a spatula. Place a plate upside down on top of skillet; invert potatoes onto plate. Garnish with parsley or thyme leaves and serve with Caramelized Onion Gravy.
