Corn Griddle Cakes

Ingredients

  • 1 cup of corn-bread batter (See recipe)
  • 1/2 cup each grilled corn and diced red pepper (see Grilled Vegetables)
  • 1/2 cup shredded mozzarella
  • Dash of chile powder
  • Guacamole and/or sour cream, for serving

Directions

  1. Add the following to the corn-bread batter: grilled corn and diced red pepper, mozzarella, and chile powder. Drop the mixture by tablespoonfuls onto the hot griddle, turning once, and cook until browned, 2 minutes per side. Serve with guacamole or sour cream.
