Ingredients
- 2 1-lb. sausage coils
- 1 handful tender baby greens (like arugula or spinach)
- 2 fat, juicy lemons

In separate frying pans, cook the coils for about 10 minutes per side over medium-high heat.

Remove the sausages and plate them stop the greens. Squeeze the lemons into the pan and swirl the juice around for 10 seconds. Drizzle it over the sausages.
