Ingredients
- 2 medium onions, sliced
- Salt and pepper
- 4 tbsp. olive oil
- 1 box white mushrooms, stems removed, sliced
- 1 box frozen spinach, thawed
- 1 lb. sliced ham or prosciutto
- 1/2 cup shredded Parmesan
- 8 oz. sour cream
- 16-count package crepes

Set 2 medium frying pans over medium-low heat. In one, saute the onions with salt and pepper in 2 tbsp. olive oil until sweet and golden, 15-20 minutes.

In the other pan, saute the mushrooms with salt and pepper in the remaining olive oil, 8-10 minutes. Remove; set aside. In the same pan, cook the spinach until heated through.

In either pan, heat each crepe for about 30 seconds a side over medium heat, as you would a tortilla. Remove and keep warm on a plate tented with foil until it’s time to serve.

Serve the onions, mushrooms, and spinach in separate bowls with the ham, Parmesan, sour cream and crepes.
