Chicken Saag

Ingredients

  • 4 chicken breasts
  • Salt and pepper
  • 2 tbsp. olive oil
  • Onion, chopped
  • 2 tbsp. tomato paste
  • 2 lbs. fresh spinach
  • 2 tbsp. garam masala
  • 1 cup half-and-half
  • Rice, cooked

Directions

  1. Cut chicken into 1-inch pieces. Season them with salt and pepper. Place olive oil in a large pan over medium.

  2. Brown the chicken pieces on all sides until cooked through, 8-10 minutes. Remove; set aside.

  3. In the same pan, saute onion in a little more oil until it’s translucent. Stir in tomato paste.

  4. Add spinach by the handful, stirring until it’s all wilted. Add garam masala. Saute for 8 minutes.

  5. Stir in half-and-half. Add the chicken back and heat until warmed through. Season with more salt and pepper and serve over rice.
