Ingredients
- 2 tbsp. olive oil
- 4 garlic cloves, crushed
- 1 jalapeno, seeded and chopped
- 3 cups chopped tomatillos
- 1 1/4 tsp salt
- 2 tbsp. roughly chopped red onion
- 1/2 cup cilantro
- 1 tbsp. lime juice
Directions

Heat the oil in a pan and add the garlic. Cook until it starts to color, then add the jalapenos, tomatillos, and salt. Cook over medium-high heat until the tomatillos start to go translucent, 4-5 minutes. Remove from heat and let cool for 15 minutes. In a blender or food processor, blend the remaining ingredients with the tomatillo mixture until just combined.
