Ingredients
- 3 1/2 tsp. active dry yeast (1 1/2 packages)
- 1 1/2 tbsp. honey
- 3 tbsp. olive oil
- 1 tsp salt
- 2 1/4 cups all-purpose flour
- 1 cup whole-wheat flour
Directions

In a large bowl, dissolve the yeast in 1 cup of warm water. Add the honey and olive oil and let sit until it becomes foamy, 2-3 minutes. Combine the salt with the flours and stir them into the yeast mixture a cup at a time. Turn the dough out onto a floured board and knead it for 2 minutes. Put it into a greased bowl and cover. Let it rise until it doubles in size, about 1 hour.
