Ingredients
- For the dressing:
- 1/2 cup plain yogurt
- 1/2 cup olive oil
- 1/2 tsp salt
- 1 tbsp. red wine vinegar
- 1 tsp salt
- 1/2 tsp pepper
- For the salad:
- 4 pieces pita bread, torn into bite-size pieces
- 4 vine-ripened tomatoes, cut into wedges
- 1 cucumber, diced
- 1/2 red onion, sliced
- 1 green pepper, sliced
- 1/2 cup chopped scallions

In a large bowl, whisk together all the dressing ingredients. Toss in the salad ingredients.
