Crispy Greek-style Idaho® Potato Fries with Greek Salad and Tzatziki Sauce

Ingredients
- Fry Ingredients:
- 2 Idaho® potatoes, cut into a French fry shape
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
- Salad Dressing Ingredients:
- 6 tablespoons olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon honey
- 1 garlic clove, finely chopped
- 1/4 teaspoon dried dill
- 1/4 teaspoon oregano
- 1/4 teaspoon black pepper
- 1/8 teaspoon sea salt
- Salad Ingredients:
- 2 cups cherry tomatoes, sliced in half
- 1/2 cup feta cheese, chopped into cubes
- 1 cucumber, peeled and cut into rounds
- 1/3 cup Kalamata olives
- Tzatziki Sauce Ingredients:
- 1/4 cup plain Greek yogurt
- 1/2 teaspoon dried dill
- 1 lemon, juiced
- 2 tablespoons cucumber, cut into small matchsticks

Preheat oven to 400º F. In a large bowl, toss together all the fry ingredients. Place fries on a baking sheet and cook for 40 minutes, flipping once halfway through cooking.

Meanwhile, make your salad dressing by combining all salad dressing ingredients in a bowl.

In a large bowl, combine salad ingredients. Pour dressing over and toss. Cover and place in the fridge while fries finish baking.

Make your tzatziki sauce by combining Greek yogurt, dill, lemon juice and cucumber.

Serve crispy fries on top of Greek salad with a drizzle of tzatziki sauce.
