Creamed Chicken with Baked Potatoes

Mmm… good… but not exactly heart-healthy.

Cook time: 90 minutes
Serves 6 people

Ingredients

  • 1 stick butter
  • 1 can cream of chicken soup
  • 12 oz. sour cream
  • 1 chicken, cut up (I use chicken thighs)
  • 6 potatoes

Directions

  1. Preheat oven to 350.

  2. Melt butter in 9×13 pan.

  3. Place chicken pieces in pan and turn to coat in melted butter. Place chicken and potatoes in oven. Cook for 15 minutes.

  4. Remove chicken from oven and cover with cream of chicken soup. Return to oven and cook for 1 hour.

  5. Remove chicken from oven and cover with sour cream. Return to oven and cook for 15 minutes.

  6. Remove chicken and potatoes from oven and move chicken to serving platter. Use wire whisk to blend juices. Serve juices over baked potatoes with chicken.
